    This sounds yummy! Do you have the James Beard cookbook? This reminds me of how he does chicken. Very simple but delicious. He had different variations manly with the pan sauce, ie red wine. Mom

    I follow Mark Bittman’s way of roasting chicken, but he probably learned it from Beard. Anyway, it’s always great.
