Last night I made pasta in the style of risotto again. This time, I added onions, mushrooms, tomatoes and some left-over sweet potatoes. I really enjoy pasta cooked this way. It’s much more flavorful, and I don’t feel like I wasted time and energy boiling a huge pot of water I was only going to dump. I think I might look at how I can convert more of my pasta recipes to risotto-style cooking.
