Summery Tuscan-Style Soup

This soup was inspired by Tuscan flavors and intended to capture the last tastes of the season, all of which happened to be hanging out in my vegetable crisper. This recipe is based on my basic recipe for hearty soup.

Summery Tuscan-style Soup

Serves: 2-3
Time to make: ~30 minutes

  • 1 tbsp. olive oil
  • ½ small red onion, minced
  • 2 cloves garlic, minced
  • 4 cups arugula
  • 2 fresh tomatoes, chopped
  • 1½ cups white beans, canned or pre-cooked
  • 1 cup small pasta shells
  • 3 cups chicken stock
  • 2 tsp. Italian herb mix
  • red pepper flakes, salt and pepper to taste
  • grated Parmesan

Heat the olive oil over medium-high. Add the onion and garlic, and saute until they begin to color. Add the remaining ingredients and season. Bring to a boil and reduce to medium-low; simmer until the pasta is cooked and the flavors have melded, about 15 minutes. Garnish with grated Parmesan.
