Marinated Cheese

Use this technique to add flavor punch to a mild cheese like fresh mozzarella or goat cheese. This is a really elegant presentation for a cheese tray or h’ors d’oeuvres spread. Yet it’s so simple to make, you could whip it up just before the guests arrive. Which makes it a great recipe to have in your holiday entertaining toolkit.

Marinated Cheese

For 8 ounces of cheese, or 8 servings, process together:

  • ¼ cup olive oil or flavor-infused oil
  • 1-2 tsp. whole peppercorns or red pepper flakes
  • handful of fresh herbs
  • 1 clove garlic

Spoon the mixture over the cheese. Let it marinate for a couple of hours before serving, or serve immediately. This presentation goes particularly well with crostini or soft bread.

Note: If you completely cover the cheese with olive oil, it will keep for a long time — at least a week and maybe as long as a month at room temperature. Drain off the oil before serving.
