A Favorite Lunch

I started eating this lunch last month, and I usually have it once or twice  a week. Very yummy and satisfying, also light and easy.

Take 1 whole-wheat tortilla (soft taco size). Fill it with:

  • ½ avocado, sliced
  • shredded greens, your choice (cabbage also works)
  • crumbled or shredded cheese, your choice — I like blue cheese or feta, but you can use any favorite cheese.

Sprinkle with salt, pepper and lime juice. Roll up and eat.
